My wife is in grad school and she wanted to have some friends over before her spring formal and asked if I could smoke a pork butt.  Of course I said yes.  But as we all know its hard to fire up the smoker and not fill it to the top with other delicious treats.  Along with a 10lb pork butt i did 2 racks of baby backs, a 5lb fatty with cheddar and pepper jack cheese, and 30 bacon wrapped duck breast bites.

The food turned out wonderful, fatty and duck bites lasted 20 min, I had to take 2 bones of baby backs so I could try them before they disappeared and we had enough pork left over for 2 sandwiches.  Sorry no pictures of the butt, as it was on the lower level and they did not turn out that well.

BTW, the pictures you posted of the bacon weaving are nice. Wat a work of art. What are you weaving them over?
 
Those were duck breasts cut in half, easier to eat as an appatizer.  These were not the fatty duck that you think of in a resturaunt, these were wild ducks that I killed this past winter.  Very lean, and reletivly small, so the bacon does help to add some fat to the duck.
