Smoke Hollow Temp - AGAIN....

I've read a number of threads about Smoke Hollow propane and trying to dial in the temperatures, but none seem to come at it from my perspective. Before joining this forum tonight, I thought that the problem was that Smoke Hollow installed a 700 degree temperature gauge on a smoker that was built to smoke between 140 and 200 degrees. In my mind that was insane becaue I was trying to measure the difference between 140 and 180 degrees on a gauge that was built for tempering steel. After reading some posts about this, it seems you guys are gunning for higher temps than my snack stick recipe calls for and that this smoker is capable of delivering them. I have never registered a temp hotter than 160 degrees on the door of this smoker, and the oven gauge that I stuck in there seemed to agree. Do I likely have a propane supply problem instead of a temp gauge problem?
 
#1. Digital thermometer tested ice water /boiling water to verify
Pit temps ( don't have faith in the oven therms or on the door
therms )
#2. Is your burner burning blue ( yellowish, may be partial plugged
holes )
#3. Is your regulator high or low pressure
#4. What is your drafting (usually full open on exhaust )
#5. Full propane tank ( partial tanks can lose pressure sitting around,
was unaware until my gas guy told me )

Just a few things to check
Orfice can be drilled another size if really needed.
 
Thanks for the ideas. I’ll get a digital thermometer and check the flame.
