Just a few questions here. I seasoned the smoker last night but noticed that the coolest i could run the smoker was 225 degrees, does anyone know of a way other than cutting holes in it to reduce the running tempature. The whole reason i bought this was to make venison jerky. Don't get me wrong, the smoke is very nice and very appealing but would really like to be able to to smoke at lower temps. Any help would be great, Thanks.
 
There are some mods you can do by adding a needle valve to your gas line

The hazard is if your flame goes out, your gas keeps running
 
I do have two burner. Did run it with one, still too hot. Ended up adding a flange ball valve. Problem fixed!
 
thats interesting.  I live in Georgia and I was smoking on a pretty warm day and with one burner on low i was getting 160ish pretty close.  I had to go past medium to get 225 withone burner.
