I saw this little guy at Krogers and had a discount coupon to burn, so I picked it up. It was pretty small<3lbs and was already salted and peppered. I ended up adding more pepper to it, once I trimmed off some of the hard fat.

Since it was so small, I decided to smoke in a pan with some beef broth.

6.5 hours later at 225 and a foil cover 4 hours in, the IT was just at 203 and was finally probe tender.

Had some serious shrinkage going on after the cook, but surprisingly it turned out really moist and the juice left in the pan was great. The flat had a subtle smokiness to it, but once the juice was poured over it, it was really good.

Hopefully, I can get these when they are on sale and try this again.
 
I'm no expert , but looks like a cross cut of the point end to me .
It does look like it came out good . Nice work .

Thanks! Yeah, it was pricey, but I had a 20% off coupon that I was able to use. Otherwise, not sure if I would have bought it.

Thanks, it turned out very nice. It just needed to be bigger. I love left over brisket.....
