I got two small briskets from a friend he wants smoked.

I've only done full packer briskets in the past.

What do I need to do different? Same process, just a shorter time?

I've been using this "Time Delay" process with a lot of success.

So you say two small briskets, just wanting to double check… are those two small whole briskets your referring too? Or do you have a couple of flats or points?
 
A couple of flats. Very square cut.

My friend bought 1/2 cow...not sure how/why they cut those the way they did.

If they're square and relatively the same thickness then from a brisket standpoint it should be a relatively easy cook.Probe for tenderness and call it a day.
