Slow smoked spare ribs

Seeing all the beef ribs lately had me craving ribs. Pork spares will have to do. One rack was from home raised an the other is store bought Hormel. Left untrimmed and rubbed with some Lay's BBQ seasoning clone rub. Alder pellets in the AMNPS. set temp at 230' and rolled smoke for 3 hours, then wrapped with a couple pats of butter and a splash of beer until probed at 195", unwrapped, bourbon/brown sugar sauced for and back on for 1 hour. These were really good! This was a sweeter and less savory/spicy than I normally do. Glad I did! Very nice change. Doing them low/slow all day at 230 vs 250 how I normally do them was different also! Paid off!!

Spare ribs have got to be one of my favorite foods... So delicious..... :emoji_cat::emoji_cat:

I used to trim down spares into St.Louis cut. I don't bother anymore. Just why? These indeed turned out great. Thank you for the like!

Very tender and juicy bones! They rendered perfectly with the right amount of pull. I kept probing them with and instant read and they took a lot longer in the foiled stage than normal. Thanks for the like.
