To us the package mix was salty

but the recipe needed half tsp more salt

over all awesome!

The ingredients sound good. Sounds like Greek Gyro meat. I've had something like these at a Lebanese restaurant. They call it kafta. I'm not a fan of what seem like pumpkin pie and cookie spices in meat, which is what they like to use in some of these. The one you made sounds like a more appealing flavor profile for meat.

The only place I have seen these is a cooking show on Netflix (guys name is Ansley). I could not find enough recipes to say do or dont use baking soda, but it went in. I will do these again
 
Serbian cevapcici, romanian mititei...popular fast food, picnic food, fair food in Eastern Europe.

Baking soda is used (along with lemon juice) to make them flufy and light.

My favourite meat mix is sheep and pork (likely not authentic). The authentic recipe calls for bone stock.

Tasty if done right. What you get from the store (frozen) is hit and miss.
