Well guys and gals, I am still an amateur at the art of smoking, but so far everything has turned out beautiful. So far in 2 firings of the smoker, I have smoked 20 turkeys, 1 wrapped pork shoulder, 2 briskets, 4 pork butts, and 1 deer tenderloin. I was asked in a previous post to show some pics of the progress. Here are a few.  The turkey was not smoked in the bag, I just transported it in the bag. 


 
That's allot of food and it looks great.

I'm a new as well and have not received my smoker yet, Let me know about why you used the bag over the chicken.  Did you do that to control the smoke or to let rest?
 
I didn't smoke the turkeys in the bag. After smoking the turkeys, I remove them and place them into the oven bags to keep them moist and warm for delivery.
