Had to cut down two, medium sized apple trees from my lawn due to a recent fall snow storm, and I have them split into logs, 12-16". But I was really wondering if I culd cut the seasoning time down by "roasting" them over a fire. Any chance this could work? Or would I be wasting my time.

No, the best you could do would be to dry them in a wood drying kiln. If you can put them in a heated space and stack them so air can circulate around them. should be ready in 8-12 months, apple drys much more slowly than other woods.

If you make chunks about the size of your fist and store them in a heated space you should be able to use them in 2-3 months.
