I use my BGE for steaks..

Heat it to 700 then about 2 minutes each side then shut off the air..both in and out.

Let it cook for a minute or two and we have perfect steaks..seared crunchy outside and still mooing center.

Have to be careful lifting the lid as the blast of air makes a boom on occaision.

Figured I would throw in my 2 cents

Try this

Rare Steak;
 
  • Eye round roast sliced to 1.25" thick slices.
  • Salt heavily for 45 minutes at room temperature.
  • Rinse, pat dry rest at room temperature 15 minutes
  • Jaccard tenderized both sides

  • Heat grill to 700 degrees using sear station
  • Grill 2 minutes, turn, grill 1 minute (crosshatch)
  • Flip, Grill 1 minute,  turn, grill1 minute (crosshatch)
Rest 10 -m 15 minutes
Foil for Medium Rare


Remove meat, place meat on a cooling rack over top of a pan to catch juices, put a dollop of basil garlic butter on top and rest 10-15 minutes.

Reserve juices for gravy

JAK:  I've always been fascinated by the method you describe...I first read about it being done with clarified butter at Mandalay in Las Vegas...I've been trying to figure out a way to do it well and safely at home...!--I'll be studying your link...

alelover: yeah, their steak is pretty good...especially their bone in rib-eye

I know this thread is old, but I've been looking for the perfect turkey fryer (I'm borrowing my current one)...any thoughts?...any burn hotter than others?  I'd also be open to suggestions for other outside burners/devices that could get me closer to 1000 deg...
