Saw Alton using a Kitchenaid mixer with the grinder and stuffer accessories the other night. Any of you folks use it or have any advice? Looks like quite a few are on ebay.
I use the KitchenAid to grind my sausage but not to stuff - I bought that attachment too but the tube is way too short and it would be very inconvenient to use as a stuffer. You do not need to use casings for sausage see this link
The grinder works fine, but is time consuming. For a 5 to 10 pound batch I guess I would prefer to clean up the Kitchen Aid instead of a large grinder. If you get into sausage making and are doing larger batches I would get a larger grinder. First couple years of making sausage all we had was a Kitchen Aid grinder and were making sausage with 8 to 12 deer a year; I am still shocked the Kitchen Aid still works!
For stuffing I would not use a grinder. Grinders used for stuffing in my opinion tend to make more mush instead of stuffing your preference between fine/coarse grind.
