Minne o so cold
All the talk about smoking shrmp this week made me hungry, so I thawed out some Key West pinks wrapped them in bacon and smoked them at 225 for about an hour. I used Hickory chips in my electric smoker.

Here is the process I used:

The left shrimp has the shell removed and butterflyed. I then folded the shrimp in half like the middle shrimp. and finally wrapped a 1/2 of strip of bacon around the shrimp - tightly.

I then threaded the shrimp through the skewer 6 to each skewer

Here is the finished product.

I figured as long as I was going to smoke shrimp, I may as well throw in some fattys. Tomorrow is the Buddy Walk for my Nephew. The Buddy Walk is a fundraiser for Down Syndrome. I'll bring breakfast.

This first on is 2 lbs of Jimmy Dean flattened out with red and yellow bell peppers and some cooked and chopped bacon.

Here is the presmoke pic. All the primary food groups are represented:

Top left fatty had hard boiled eggs in them.
Lower left fatty - the big one - is the 2 lber with peppers and bacon

Top right has cheese inside, middle has cheese on the inside and rub on the outside. Lower right has hard boiled eggs as well.

Bottom is the skewered shrimp (thank you Mr. Obvious)

Looks great, I didn't see any beer, is'nt that a food group of it's own?

Yes a HUGE fatty addiction. Its tough to keep them around when my boys find out I've smoked some.

The shrimp turned out good. I found that the shrimp was better without the bacon. I also think that an hour is a little long, but I have a severe aversion to undercooked shrimp.
 
I'vedone some shrimp; we have tons here right off the docks. The problem with shrimp is that they cook so fast. Okay when making jambalaya, but they cook pretty fast to take much smoke.

What did you wash them down with???
