Saturday Jambalaya tailgate with JAMVIEW

This Saturday, I did a big Jambalaya tailgate for the LSU - BAMA baseball game. The pot started out with 8 lbs of good smoked sausage.




Then went in a 7 lb. BB, cubed. The blade bone went in the stock.



Then 20 lbs of leg quarters, boiled for stock and deboned.



Then 5 lbs of onions, 5 bell peppers, 6 jalapenos, 2 heads of garlic, 2 bunches of celery, 1 bunch parsley, and 2 bunches of green onions.

Then in goes 8 lbs of good rice, 26 cups of home-made chicken / swine stock. Bring to a boil, cover, reduce heat and fold twice at 20 minute increments.




And....... GET A FORK. A good time was had by all. We ate too much, drank too much and watched the Tigers sweep the CrimsonTide!!!!!!!!!!!!!!

I like the setup you used to make the stuff (i.e. propane burner and really nice pot!). The step-by-step qvue with commentary helped me understand what you did. Great post!

Eman I can see why your chapped! Where did you get that pot? I could use one of those for gumbo at work.
 
The pot came from Krazy Kajun Cookware (www.krazykajuncookware.com)

The guy's name is Shane Martinez. He imports these from China but the quality is good. You have to be careful with Jambalaya pots. If they are too thin on the bottom, you will never be able to cook jambalaya without burning it. He is here in the Baton Rouge area so I picked mine up, but i think he will ship anywhere.
