Hi everyone, I am in St. Charles, MO USA. Work for a big box store, have a Brinkmann Grill/Smoker (way before they got crappy), and a Fornatto wood fired oven thet makes awesome, bread, pizza and a brisket thus far. I am now on a No Salt diet and am removing as much processed food from my life as I can. I grew up on homemade sausage and am looking to try my hand this weekend so I'm looking for info.

If you're strictly no salt, I don't know how to do it.

But I'm sure there are folks on here who will know,

I'm thinking cure #1 and a product called "No Salt".

Don't think you can use TQ also known as Tenderquick,

to much salt.

Please wait until someone that knows more about this stops by.
