Ruining a paint job

Hi everyone-

I recently just repainted my highland smoker, with a particular focus on the firebox. I sanded the firebox to the bare metal, repainted it with 2 cans of the 2000 degree primer and then 2 cans of the 1200 black paint. I then ran a fire in it the next day, after observing the dry times they suggested.

My questions is two parts:
My lid thermometer is inconsistent at best, until today when i replaced it. Like fire going strong and it still reads under 100, so i tap it a few times and it shoots up. Anyways, i say that to say I dont trust it, and usually stick an electronic one in the chamber too.

So, as I heat up the smoker for the paint sealing or whatever its properly called, I kept the chamber temps between for 3 hrs at 225=250 with one time i overloaded it to 300 for about 15 minutes. Those temps were according to my electronic thermometer sitting just above cook grate level. My lid thermometer was reading 300-350 the whole time.

So, my question is should I have been basing the temp to keep it at on the lid one or the electronic one? After 3 hours of "sealing" this is what the paint looks like by the firebox, and i cant help but think I messed something up, and the paint is gonna start peeling again soon.

Thoughts?

Hope I'm wrong but sooner or later any/all heat paint will come off.
Best plan is to buy some spray cooking oil and soak the entire exterior after cooking as the smoker cools down.
This "seasons" the metal and prevents rust pretty much forever as long as you keep using it.

Youre right, and I will be doing the oil bit tomorrow for the first cooking usage after paint. Just didnt think the paint would be "going", if that is in fact whats happening, after one "heat up"
