I had my wife pick up a chuck roast for burnt ends and just realized she got a round roast instead which looks really lean...anyone ever tried this using a round roast?
I think it would be way too lean for burnt ends, I would just smoke it & they make fantastic roast beef sandwiches when sliced real thin.
We like ours rare to med rare. So I pull them off the smoker at about 125 & after a short rest they settle in around 130.

Yep. I aagree totally.
I made burnt ends from a round roast as a test once. Because the round has pretty much no fat,the burnt ends came out dry and tough. Complete fail.

I plan to do them Tuesday so I made a Brookshires run this morning and bought a chuck roast and now have it marinading. I like to marinade stuff my meat 2-3 days. I'll start a new post when the day I make them!
