Rolling insulated unit - Not sure if it's worth the trouble

Hello all.  I recently took a trip around the commercial kitchen section of a clearance/liquidation centerlooking for a commercial stainless refridgerator to convert into a smoker.  Unfortunately, all the fridges worked...and were well out of my price range.  I was almost going to give up the search when I happened upon what appears to be a rolling, insulated cart.  The price wasn't hateful, although I thought it was a little much.  I took some picutres:





My biggest concern is getting to the materials inside the double walls of the cart.  All of the seams are welded together very well with little evidence of a seam.  Secondary concern is the geometry of the cart.  It's fairly wide for its height, and I could see having several hot/cold spots within it.
 
Looks to be a heated holding cabinet, I have one that will heat to 375*F, so should be no trouble to use as is. I bought mine thinking it would not work but it does, so will use as designed, I got a 3 door commercial freezer to build my smoker out of.
