Rice paper to wrap whole muscle cures.

Going to try wrapping some cured pork in rice paper (spring rolls wraps). Collagen sheets seem to be all the rage these days, but they seem to cost more than the meat! Lol.

I have never covered my whole muscle cures while they hang, but I would like to try it.

Have any of you used rice paper as a cover/wrap to help moderate the drying process or just help keep the outside from getting too crusty?

I often think that wrapping the whole muscle cures is a just a wild goose chase to sell you more stuff you don't need. Maybe it makes a big difference, maybe it's unnecessary... Want to try it and find out.

Maybe rice paper will prevent case hardening or improve the drying process somehow?

Interested to know what you guys think.

Wrapping gives the molds a surface to grow on which makes removal/cleaning easier. Rice paper???......might work...I've never tried it. The best though is natural casings...
Good thought on it being a surface for mold to live on. Stripping a hog casing off a little salami does leave a pretty clean surface. I was hoping to do the same thing on a hunk of cured pork maybe. I know I can use beef bungs and the like, but they are very expensive for what I'm doing.

I have some good white mold going in my basement salami box which I like, so I'm hoping it carries over to the whole muscle cured hunks maybe.

Rice paper should mold ok I guess. I just wonder how well it will stick to the meat over the long haul.

Gonna give the rice paper a try.
