Ribeye Stuffed Red Peppers

I had smoked a half boneless ribeye a while back and froze the leftover slices for another use. Well last night I decided to do some stuffed peppers with it. They turned out great! And a great low carb meal if your into that sort of thing.first a few pictures of the original ribeye.

And now for the stuffed peppers. I started with pre cooking some mushrooms and onions

Then I chopped up some of the leftover smoked ribeye.

then a few slices of provalone to add to the mix

after that I mixed all the meat,cheese ,shrooms and onions together with a few tablespoons of mayo to hold it all together and stuffed into some nice red bell peppers cut in half lengthwise.

I added a little water to the pan to help make the peppers soften up during the smoke.

I had the UDS started and used hickory and cherry for the wood this time. Smoked for about an hour then topped with more cheese and back into the smoker for another 20min. It was a realy nice calm night to sit out on the patio and cook dinner. Doesn't get any better than that.

here is a picture of one cut in half. Man they sure were delicious! I had also sliced a tomato and salt and peppered them to top the peppers with.

now that I made this post I'm getting hungry again lol!
 
Excellent "Down Home" cooking there. Can't get BossLady to eat bell peppers, but this would work for me for a couple of days. You make it look easy enough. Thanks for the write up.

If she doesn't do the peppers I've done this same thing in kind of a reverse way before as well. Instead of using a bell pepper use a big portabella mushroom cap. Also I usually just use whatever leftovers I have frozen. This time it was ribeye for me but use whatever you have. Could be chicken....pulled pork..brisket.. then just add to the mix whatever goes with the meat your using.
 
Looks really good Sow, maybe substitute the schrooms for maybe spinach and I'd be all over that in a heartbeat.

Spinach would be great! That's what I love about doing stuff like this. You can add whatever you have on hand or whatever flavors you like and make a great easy dinner!

Good idea. Thank you for pointing out the obvious. Sometimes you just miss the trees looking for the forest! DOH.
Lol! That's a funny way to put it.. believe me though I have missed my share of trees for sure!
 
I like the idea behind it. Nice!

I can see doing it w/out the cheese but with a chimichurri sauce of some kind for a slightly brighter version.

Great idea! Anything goes with a stuffed pepper in my opinion. The ones I made were really based off of a philly cheese steak because that's what I had on hand. The possibilities for stuffed peppers are endless!
 
Wow, I too had never thought of this. I have about 2# of Tri Tip vacuum sealed from a revere shear last week. This one night, some fried rice and steak another night, and steak sandwiches for lunch! Thank you

Looks great ! My son does that with deli sliced roast beef and onions . Why I never thought of the left over beef ,,, Like my first foreman used to say " Don't go Bear hunting "
Nice cook .
 
My wife wouldn't eat bell peppers until I bought the orange and yellow peppers. She'll now eat the yellow ones and I eat the red and green.
 
Great idea! Never thought of stuffed peppers, I have a ton of green and purple ones that are ready to come out of the garden now!
Fresh garden peppers would be fantastic! Sooo much better than store baught!
