Dear Hive Mind,

I have an 18 inch Down Under bullet smoker (exactly the same as a Fornetto Basso. In Canada they call call themselves Down Under). I’m going to smoke some side ribs using the hanging hooks that come with it. Would you recommend using the water bowl with water or just hang directly over the coals?
 
This time of yr I wouldn't use the water bowl as there is plenty of moisture in the air.
I'd put the bowl in empty to us it as a heat defuser.:emoji_thumbsup:
 
The bottom may hang a bit close to the coals to run without a water pan. And I would keep water in it or the drippings may burn up and put a layer of burnt grease on your ribs, unless you're running really low and slow.
