Here is a recipe I used for making Rhein-Hessen Bratwurst. They are most delicious.
This is more of a fork and blot of mustard sausage than a bun bratwurst IMHO.

Rheinhessen Style Bratwurst
1.5 Kg lean pork
500 g pork belly
2 medium-sized onions
160 ml Riesling
34 g salt
8 g black pepper
1.5 g Mace
4 g ginger powder
1.5 g cayenne powder
4 m Frying intestine 28/30
Soak finely diced onion in Reisling. Mix with seasoned and ground meat.
Grind 6mm plate
