I jave a cabinet style offset reverse flow smoker that has 3 shelves . There is a temperature difference of about 20 degrees between each shelf., the top shelf being the hottest. Is this normal ?
Not familiar with your smoker but I would think there would be a temp difference, I have a mes 30 and all shelves are a little different, even left and right on same shelve can be a little different. You could get a little fan to circulate the air but I just rotate meat every hour or so.
