Results from my first batch of smoked cheese

Son,dad this cheese is nasty,my six yr.old grandson agreed.I asked,what's wrong with it?Son,it's smokey.Hellooooo,it's smoked cheese.After two weeks,I cut up some cheese,Christmas Eve.Sure it did have a smokey taste,but I didn't think that it was over powering.But I guess everyone doesn't like much smoke.Anyways,I thought it tasted great,but I'll let the rest of the cheese mellow out a bit longer.

Time will change the flavor. I've noticed that personally I do not like cheddar or colby cheese with smoke. I do like swiss, gouda and string cheese.
