Lay them on me..I thought of just asking in ABTs, but then realized this is a good idea for any type of food. It's finally supposedly going to not snow again till next winter! <Ha!> So let us see what people make to welcome in the new Spring!

I haven't gotten any ideas at all, so I will shamelessly see which ones I can try and do just that ;)
 
Morning Tom. I've got friends coming over next weekend for some smoked goodies. I plan to smoke a brisket flat and point (separated to fit in the MES 30). The appies will be burnt ends and Bacon/Pineapple Rollups. I've included the link to the Rollups below. They're a real PIA to make, but are ALWAYS a huge hit. If you give them a try, be sure to make about twice as many as you think you'll need. They go like hotcakes. Just let them cool a bit before serving them--straight out of the oven they're just like molten lava when you bite into them.

Wow! That there is a fancy word! That stuff is still too complicated for me since I'm a real real novice. I'm smoking a more mundane thing for friends this Sunday like a pork butt and macaroni and cheese. For apps smoked chicken wings.

I keep hoping for another good sale to get them Umai bags to do charcuterie JC!

And I can't decide what I want to do more Gary..the roll ups..or the stuffed loin. I love the apple pie and pork combo. I've done it with pork chops <on top> goes so well..

And Humo; don't worry..thats the fun of this lifestyle..you get to try alot of things..

I was considering a brisket for my Bday that is coming up..but WI weather likes to snow on my birthday and that would be problematic.

Some day I might try sausage making; right now I'm just learning how to smoke easy stuff in the Woodwind.
Tom, finally our weather is breaking and I'm sure throughout the Summer I will be expanding my "repertoire".

Saw a recipe for a cast iron apple pie in the smoker that I might try this Sunday
 
I've tried apple dumplings in the smoker and they were very good Humo!

And making Sausage isn't all that hard, it's stuffing the casings I find difficult!

<Also try smoked corn bread..oh is that good..>
 
Right now it's also good cold smoking weather for cheese Humo!
You're right Tom, I'm on my way to the store to get several blocks of cheese to cold-smoke them sometime next week. Got my A-Maze-N and cherry pellets ready to go!

Just checked the weather for my first Pork Butt smoke for friends this Sunday and as luck would have it when I start smoking at 5:00 am temp will be 28 deg F but eventually in late afternoon will rise in the 40's (am I in Wisconsin???).

Why thank you! And have that hair dryer on stand by to trick the MES into firing up! I keep an old one in my BBQ crate for that, also drying any thing on the smoker it self in a hurry.


I am going to have to try smoking some cheese this year...

I plan to make a run out to Hennings and Verns next week, load up on their 'mistake' blocks. The ones nut cut just right for stores....their loss is my gain!

Somebody just bumped an old thread on Amish Mustard eggs I think will be a great treat at Easter.

I remember seeing that post when researching my self. Here in WI I never even heard of the beet ones!
