My plans for this week is to whip up two meat loafs for the smoker, in theory to be stored away for another day. I either always make the old standby plain meatloaf or I copy the one from MeatEater and since the MeatEater version is much fancier and has cheese etc in it, I'd like some experienced hands to take a gander..

I don't put much nutmeg in due to family members not overly enjoying it, and no pine nuts at all, but will this work? I plan to cook my meatloafs on a grill tray I got. Small slots in it to let drippings through, stainless steel, and my concern is with the cheese etc, it'll end up falling apart or some thing and be a mess or stick and be a failure.

Note; I'll only do one of the meatloafs to this recipe, and I plan to use horseradish cheese. In the oven I had issues before with it basically exploding over the sides of the loaf pan and making a mess, and now it'll be free standing as it were. I'm also open to other ideas to doll up a meatloaf.

PS: and I just realized I had typed this up in pork, not general. My bad. This is what happens when I have multiple windows open and reading things!
