Alright I -love- maple breakfast sausage, but they last about five seconds in my house, I also love snack sticks, so I plan to combine 1 pound of beef and one pound of turkey to a trial run on these...
Meat:
1 pound Ground beef.
1 Pound Ground Turkey
Dry Stuff:
1 Tablespoon of TenderQuick for the 2 pounds of meat.
1 Teaspoon garlic powder.
1/2 Teaspoon Black Pepper
1 Teaspoon Red Pepper<Crushed>
Wet Stuff:
1/4 Cup Maple Syrup <Real Maple>
1/4 Cup Ice Water
Some Hot Sauce possibly.
I'm basically following Bear's Awesome Unstuffed Smoked Beef Pepperoni Sticks, sans changing out some seasoning. I'm aiming to make a spicy maple snack stick and I want to get into using turkey as it's cheaper, and healthier.
Any suggestions/safety concerns on my ratios are appreaciated. Do you think 1/4 cup Maple Syrup is to much? I'm inclined to not want to use that much, but I want the maple flavour to come through. Maybe I should add some drops of actual maple flavouring in? I have that for when I make cakes on hand.
