I want to put my digital thermometer through the smoke stack on my MES and check the temp vs what the digital display on the smoker reads and was wondering where I should place the probe inside the smoker. Any recommendations is highly appreciated.
 
I agree with Smoking B, you want to know the temp where the meat is. If your probe does not have a grate clip, stick the probe completely thru a small potato or old wine cork to keep the probe tip off the grate.
 
Im going to do a run on it this weekend with no food in the smoker to see if I can get a accurate temp. I will put it on the grate clip on one of the shelves. Thanks for the replies.
 
You will probably find the digital readout is inaccurate. My MES 30 runs about 20 degrees hot, digital readout 225 while calibrated probe 245. Other members report theirs running cold, haven't heard anyone say it was right on the money, lol. Good luck.
 
I did a dry run (no meat) yesterday and found that the actual temp inside my MES to be about 23 degress off. Going to do some ribs this weekend to check it then. Also put a piece of stainless over the chip box and was glad to see that I didnt have the hot spot in the top aft right corner.
