i found a few sites on google that sell the whole thing and a few recipe sites but didn't seethe actual recipe

Try these guys. I think they carry a seasoning packet. Mostly for venison but definitely Lebanon Bologna.
By the way, it is almost criminal to tease a Pennsylavania Dutch expatriot with visions of Lebanon Bologna or Shoo-Fly Pie.
