Now that I have the drip pan installed correct going for my 2nd run. Ribs and Oxtail inspired by Baconyoulikepig. How do you insert person? Going to smoke Oxtail for 3 hours than braise for 4. Going wrap ribs at 3 hours than put in MES40. I know I am cheap. Don't see burning pellets once in foil.

The big oven gonna have the oxtail in it.

I did not think this through. I have sourdough ready for oven and oxtail in there. Guess it gonna have to wait. Needs 500 degree oven.

Pull the oxtail put them over a low burner until the bread is done .

Just ate some of the ribs did yesterday. Got to say some of the best I have done in some time. Think gonna like this smoker. Taking longer to cook but has a nice smoke flavor. I keeping at 225 for first few hours.

Thats great . I always like ribs better the day after . I have some spares ready to come off now . We will see what happens . Have some pulled pork too .
