re-smoke/cook sausage

I missed adding a seasoning to my summer sausage, it is very bland, can i take it out of the casing, regrind, add the seasoning and restuff?  if i do that do i have to resmoke/cook it to bind it?
 
If it's already been tempered/cooked, it's a done deal...the proteins have bound-up and if your grind it again you'll end up with crumbs that won't flow through a tube. Come to think of it, once it's stuffed and cured, that pretty much sets it up tight enough that you'd have a difficult time working it again.
