Ran out of Tenderquick. Couldn't find it at Wegmans, where I can usually find it. Pretty expensive online, shipping etc. Went into a local Mennonite Bulk food store, and there it was, 2 lb bags for $4.89. Couldn't pass it up.
 
I got mine at an Amish market in Annapolis. They also had Salt Petre but I was afraid to mess with it.
 
I saw the saltpeter too. I wouldn't hesitate to try it. Have plenty of #1 and #2, needed the TQ for my bacon recipe.
 
I can get TQ with no problem I can get cure 1 from a local butcher shop. I have to order cure 2 as I haven't found any local. 

I remember when I bought my 1st bag of TQ. I thought it would be a lifetime supply. That was many bags ago.

I've been through many, many bags of TQ. Have cure#1 I picked up at the local Gander Mountain. Got my cure#2 from the sausage maker. My only experience with cure#1 so far has been in Pop's brine. Use TQ for bacon, Canadian Bacon and summer sausage. I love TQ, but seems like a lot of people look down on it as "less" of a cure than #1....

Let em look down. I love it and it works for slab bacon, Can bacon, Buckboard bacon, dried beef, jerky, etc. just look at Bearcarver's Book. I quit carin what people think a LONG time ago.
 
From my perspective I prefer cure #1 in some things so I can decide how much salt I want in my recipe. I use TQ for some things, like quick cured pork chops and it works great.
