I found straight hickory to be a little strong. I've been using oak and cherry on butts and ribs. Did a rack of ribs in beech, Wow!

Hickory is good, but I also find fruit woods do wonders with pork. I know my wife and daughter love them some cherry/apple wood combo smoked ribs. Lol.
