The real question do you miss the snow or beef the most?
BOTH. I want it all. A deep pow day with a bloody steak for dinner,

This season was very well not good. I got a couple pow days early, but then broke the ankle and that killed it all together…missed a couple storms but overall I dont feel like I missed all that much.

Beef…I will be having steak in no time! Wife’s going to see some fam in couple weeks - she’ll be out 10 days i think. Im thinking at least 4-5 steaks. I would have said 10, but all this no weight bearing no activity hard made me pudgy. On the scale I didn’t really gain weight, but not fit like I was.

I have posted this before but the dressing is really pretty simple... And to be honest my wife doesn't measure she just adds stuff but here is what she seams to do. PS. the golden balsamic can be hard to come by so when it is in stock we about clear the store shelf to keep a good stock of it at home....LOL

1/4c golden balsamic, 1/2c classic olive oil, 1/2tsp dijon mustard, 3tbs honey, 1tbs diced shallot, S&P to taste, and 1/4tsp poppy seeds! She blends it in a powered blender. Lately my wife has been making about 3 cups at a time and keeps in a smaller mason jar for quick use.....

WOW!! That all looks outstanding. I have a couple of the petite tenders in the freezer and this might prompt me to get them out. Never thought about wrapping them with bacon but it does sound like a great idea. Beautiful job right there.

Thanks Robert! Oh yea wrapping them with bacon adds the fat they need back in because they are so lean!

The wagyu petites I did before these didn’t need anything!!!! In fact the next time I’m lucky enough to get them it will be just sea salt and black pepper!

Great meat. Perfect salad. And I love caramelizing corn like that. Nice work!
Thanks Sven! Pan seared corn is really quick and tasty for sure, I have also been seeing it on many recent cooking comps so its coming back into season!
