With the limited choices at the stores, I thought I'd start a thread on the dinners everyone is making with what is available. Here's what I made last night...

Only found a small chuck roast hiding way in the back of the freezer case. I bought it, then had to decide how I would cook it. I had potatoes and carrots already at the house I neded to use up so I decided on a good ole pot roast. Seared in the C.I. pan then in the crock pot overnight.

That will keep you healthy! Looks real good. We have been doing a lot of one pot meals - little meat lots of veggies.

Good looking pot roast! I could do a plate of that...along with some good crusty bread to soak up the juices!

Nice. My crew are big fans of my Jamaican Pot Roast and Spinners (dumplings). It's a Jamaican Oxtail Stew, modified to use a Chuck Roast....JJ

I will say I have not found one single pound of ground beef in 2 weeks! I bought a case of briskets about a year ago and have one in the frezer that was not a great candidate for smoking......so on to the grinder tomorrow! 18lb should last a little while.

I know what you're going through, been to the stores several times this week, finally today got 4 lbs burger, 18 eggs, and 5 lbs of potatoes. Not fun

Fortunately, Eggs are not something I have to worry about. With the warm up and longer Sun exposure, I have been getting 10-12 Eggs a day from my Chickens. I also have 4 Roosters. Two of them are being transferred to Freezer Camp soon. They don't play well with others.
I wish you all luck with the grocery craziness and am confident, This Too Shall Pass.
In the mean time, keep working with what you have. Some great meals have come from just a few ingredients...JJ

That looks really good. And I'm not a cooked carrot fan either!. Yesterdays shopping improved. Though not anywhere near pre-flu levels.
