I have an employee that has been going above and beyond, and he's been working long hours for the company. He's working both days this weekend. (I did too ... but I go in in the wee hours) I decided I'd do him a solid, and treat him to a bbq lunch as a thank you - so yesterday I went by my local meat market and bought a rack of beef sort ribs. Please excuse the scalping trim job - that's how it came out of the cryobag.
First I trimmed the fat that was left to a manageable thickness, and then seasoned them up with Meat Church's "Holy Gospel". I wrapped them in plastic wrap, and put the in the fridge to chill.
Then I poured myself a glass of bourbon - just what the doctor ordered.
I lit the Yoder YS640S at 11:30, and got it to 275F with oak pellets .... the meat went on at the stroke of midnight.
I went to bed for bit, then got up and went to work. I put in several hours, finished up, and came home. Here is a photo taken at 6:45am ....
They need a few more hours - they'll be ready in time to rest in a hotbox, then I'll deliver them to my employee for lunch this afternoon. I'm keeping some for myself too!
