so i got the bright idea to thaw out a brisket and smoke it this wknd. i pulled it from the freezer on tuesday so i could smoke overnight friday/saturday bad weather made me wait till sat. so i open the bag from the freezer and

also cornbread in the dutch oven and those little cornbread sticks (the kids love em) ABT's and stuffed bellas...... i finished eating 3 hrs ago and im still full!!!

nope..but in the UNLABELED (my fault) freezer bag it was wrapped up and i couldnt see it! i have to say i was planning on brisket but it all turned out ok in the end!
 
theres only 2 of us in this household & we both love to cook & eat.When theres sales on we take advantage whether meat or staples.Were pretty proud of our supply & organazation.I'm very maticulas (sp) when it comes to safe storage and labeling our food.If I want to grill ribeyes 1 nite I except ribeyes-salmon I gonna have salmon.Seems you need a new file system in your freezer,sure makes prepareing dinner plans simpler.If you don't have a food saver maybe think on those lines.
 
I think it is funny too. Its happened to me before. No problem maahhn! There's alot bigger things to get worked up about. Looks like you recovered very nicely.

That looks really good. Living very close to the mushroom capital of the world, I always enjoys smoked ports. I marinate them overnight and almost always have them on hand when I am smoking. I stuff mine with crabmeat. They make great snacks while waiting for the main dish to come to temp.

I also cook them up with some sharp provolone or imported swiss and slap it on a hamburger bun. Cant beat fresh shrooms.

I have a buddy who owns a mushroom farm and oftentimes I will visit him with a fresh coffee and he returns the gesture with 10 lb boxes of fresh ports.
 
i did it all on the ecb. the shrooms went on last. they were stuffed with panko bread crumbs, garlic, celery ,mushroom stems and italian seasoning. topped with shredded mont. jack. on the smoker over hickory for 1 hour. probably could have stayed on longer....but no complaints inside the house!

i will try this weekend. seems my wife is starting to think like me.....thin blue smoke in the eye and charcoal on the brain!

she is already coming up with other things for the smoker..different stuffing for the shrooms and ABT's
