I smoked a boston butt the other day.  Had an issue though.  When I went to get it off my smoker, it pulled apart.  I've never had this happen before.  I think it lost a ton of juices because it didn't rest at all since I pulled it at an IT of 195.  Anybody have this happen before? Any suggestions on how to not have this happen again?  Before and After Qview!!




 
I don't know what temp you used, but I use about 220*--230*, but then at about 165* IT, I wrap it in foil & add a foiling mixture until it hits about 205* IT. Then if it falls apart it doesn't matter because it's wrapped in foil or in a foil pan.
