I need a little help please.  I have done pull pork may times and have come out great.  I have been asked to do pull pork for sandwich for the Relay For Life walk in our area.  They will be selling the sandwich as a fund raiser.  To get the most out of a piece of meat what would be the best cut to use.  And also about how many med size sandwich should I get per pound of meat.  I may have to cook some the day before and the also the day of.  The one I cook the day before should I got ahead and pull are heat up a little the day of and them pull.  Thanks for any information that may help me plan for this.

You will want to pull the pork before Chilling it is much easier and it reheats better. On the Meat. The best cut for Pulled Pork is Pork Butt. What ever weight you start with you will end up with Half that amount or a 50% Yield after Smoking, removing the Bone and Fat. So figure this way...

100 sandwiches  X 4oz portions  =  400oz  /  16  =  25Lbs PP  /   .50 yield  =  50Lbs Raw Pork Butt

You will gain back a little weight by adding a Finishing Sauce or even just Apple Juice to the meat when you are reheating. Make sure you reheat to a Minimum IT of 165*F and you MUST keep the Meat above 140*F at all times, I suggest 150*F to be Safe in case of fluctuation on a windy day. 2Cups of Finishing Sauce or Apple Juice will moisten 5-6 pounds of PP and you gain about 1 pound back. You can use yours or try one of mine. Good Luck and put extra effort into watching Temps and keeping everything Clean. Be Safe...JJ

If you and/or your Customer like Tangy Pulled Pork this is a Finishing Sauce that will please a variety of tastes...

If the Majority like Pulled Pork on the Sweet side, this Recipe is great and if you add the Optional Vinegar, Mustard and Ketchup you can get away with out any additional BBQ Sauce on the sandwiches...
