Probe for baby backs?

Still a rookie (and read this site a lot), so 'this might be a dumb question', but...

I'm pretty happy with how my baby backs turn out.  Some of the posts here though suggest they use a meat probe in the ribs?

Is that possible as small as they are?  Won't you hit bone?

What temp do you strive for with BB?  For ribs, I've always cooked to time and texture, not temperature...???
 
For ribs, stick with time and texture. Too hard to probe. Toothpick test for tenderness works or the bend test, pick up the rack at about one third with some tongs and they should bend 90* with a little separation of the meat. Keep a log of your times and smoker temps and just dial it in to what you like.
 
100X  the bend test is da stuff.  After a while you will know just by looking at them....what fun it is
