Sams has prime brisket for $3.28 / lbs so I couldn’t resist any longer. Brisket rubbed with an espresso rub and a Dirt rub. Smoked with B&B hickory lump charcoal and hickory wood chunks. Made burnt ends with the point using some G Hughes and Golden Monkfruit sweetener. Smoked a full pan of my keto cowboy beans loaded up with bacon , onion, ground Wagyu and black soybeans. Last up made a warm red cabbage and collard slaw to go with it. The slaw has a nice tangy and sweet apple cider vinegar based dressing with some red pepper flake and bacon. It’s one of my wife’s favs from my cooking. Here’s some food porn from the day lol.

Looks great jeff. Did you get that ground wagyu from sams? I picked up 3lbs at Sam's the other day. Doing wagyu smashburgers tomorrow

I did Jake. Did burgers with one lbs. Dindt intend to use the rest in the beans but forgot to thaw any grind meat. Overall the burger was ok but likely I won’t spend the $5 / lbs on it again. It had a lot of fat too, I’d guess it around 73% lean.

Nice sounds perfect for burgers. I didn't have super high expectations

That looks great! What is in that side dish that looks like some kind of braised greens?
It’s a warm slaw of red cabbage and collard greens. My wife loves it. Dressing is a apple cider vinegar based with some sweetener , sugar free catchup and red pepper flake. Bacon mixed in too. Here’s a link to the first time I made it with the recipe. I up the sweetener to taste usually.
