PP tacos/fatty today and AMNPS question

I put in an ~9lb pork butt for PP tacos around 12:30am. I got my AMNPS going and everything seemed ok. I monitored things for another 30 min and went to bed. I got up around 4:45am to check on things (my 2yr old came to my bed so I was awake) and the AMNPS was out and barely burnt after my first check shortly after 1am. The temp of the meat at that time was around 120. I relit the AMNPS and did both ends to try to get a push. Woke back up at 6:30am and the temp was 140-141. AMNPS was ok.

I’m still new to the AMNPS and only been smoking meat for a little over a year. Should I be concerned about lack of smoke flavor since the first 3-4 hours was without smoke? I know the first few hours is important.

By the way, I’m also doing a fatty later today and will be posting more pics later.

You will most likely notice a less smoke flavor. Should we say lesson learned. So next time one will make sure that all is well before retiring.

For sure, since I had it I’ve had the opposite problem with the AMNPS burning up quick. I move my smoker from my normal place and later today I moved back similar to how I had it. Don’t know if the airflow had anything to do with it, so who knows?
 
Pork is at 190 so throwing in the fatty now. Did it jalapeño popper style with sausage cream cheese, bacon bits, mozzarella and a bit of shredded cheddar. We shall see how this turns out.
