I have a couple of pork shoulder in the freezer and was thinking about doing up some pork steaks. A couple of questions what is the best thickness the slice the shoulders into for steaks and what temp is optimal for the IT. I greatly appreciate any and all responses.
 
I usually get them sliced 1.5" thick. SPG quick sear on high for both sides approx 2 min each then move to lower temp side of grill and continue to cook for approx 25 min rotating & turning every five minutes. I also baste lightly with Italian dressing.
 
I just did the 5th of a series of 5 tests on Pork Steaks.
The 5th one was the best of the 5.
I sliced it to about 1", then SV'd it @ 140° for 24 hours.
Then I just grilled it on both sides to finish it.
It was Tender & Tasty!
