We lost our Sam's club so I joined Costco. Now, however, they have boneless pork shoulder instead of the bone-in shoulder I got from Sam's. Will that make any difference how I cook it or will the end result not be as good. Thanks.
 
Ive smoked quite a few costco boneless pork shoulders and theyve been good. Read the packaging. The ones they sell here i believe are enhanced so you may want to cut back on the salt.
 
You shouldn't notice any real differences. They both taste great.

I like the Costo shoulder even though the bone flavor is not as good - the only thing is that I always tie the roast so it cooks uniformly
 
Those Costco boneless pork shoulders make for easy buckboard bacon. I slice then into into 2"-3" thick pieces, cure, then smoke. Yummy stuff. You could just butterfly them too. I don't have that kind of room for curing.

The bag of pork sirloins they sell are great for Cabackian bacon, ie back bacon north of the Canadian border, Canadian south of the border. There are usually 4 to a bag.
 
I've cooked a number of the Costco boneless butts and they do just fine. I do agree that you might want to tie them.
