I am having a last minute BBQ tomorrow evening.  I always like to do my pork shoulder the day before so I am not stressing if it's not done in time.  But I just got the 8lb pork this morning, it is wrapped in rub right now, but how long is the minimum it should marinate?  Debating if I should put it in the smoker now or wait until 10:00pm tonight?  I do not want to be up all night, but will sacrifice a late night if I need to.  Thanks in advance!

Go ahead and throw it on. There may be a benefit to rubbing the night before but it's a shoulder, all it really needs is to sit on the smoker till it's done.

I agree with LanceP.  Smoke it now and save yourself and save the hassle.  Keep some extra seasoning/rub and you can always shake some in after pulling and mix in for a little extra flavor.  It works perfectly fine.

Best of luck!

Thank you!  I put it in at 1:00pm, now I am looking for articles on getting TBS with a Masterbuilt I have been having a hard time with the thick white smoke lately.  Will update throughout the day, hopefully this pork turns out good!  First time smoking for a crowd other than family...

Well I can't give any info on the smoking process with the MES.  I was using the A-Maze-N Pellet Smoker (AMNPS) from day one with mine.  It gives way more control of your smoke generation.  You just add pellets, light, and after a few smokes you get down what to do and not do, like:  No water in the water pan, light with a propane torch or use some gel alcohol to get the pellets good and started, make sure it flames for 10 minutes, make sure you have some air coming in, etc.

That may sound like a lot but it is actually pretty easy.

Almost all users of an MES I see on the forum use the AMNPS.  Many also build the Mailbox Mod to go with it but that's not mandatory.

Best of luck on the smoke, let us know how it comes out :)

I know I keep saying I am going to order it and then never do.  Probably because it seems complicated and adding something else to the learning process.  But seems like it is a must with the electric smoker!

Well, 10.5 hours in and only at 160.  I foiled it, put in aluminum pan, upped temp to 275 and back in.  Thinking I should put in oven at 325 to speed up process??

My last 8 pounder a few weeks ago I foiled at 165F and it took 1 hour and like 45 minutes to get to an IT of 210F.  I had the smoker at 275F the entire smoke.  I think if you up to 325F you will get a similar result :)
