Have a leftover smoked 3lb pork loin sitting in my fridge .What are you're go to leftover recepies?

Sliced thin with lettuce & mayo, loins are great for sammies!

Quick Carnitas
Cube into 1" pieces, add some chopped onions, some bacon grease in a skillet and fry over high heat to crisp edges.

Quick Al Pastor
Cut into slices about 1/2" thick, marinade in some crushed pineapple, achiote, cumin and salt, in a skillet or on the grill quickly sear the meat.

Chile Roja/Verde
Pork chunks in red or green chile sauce

All three make great tacos or burritos, just lightly brown or steam some tortillas.
Add rice/beans

Cut loin into chops, make a nice Marsala sauce with mushrooms
