Pork Butt and Camp Chef Pellet Grille

I am about to smoke 2 butts and I have a question for those that have used/use a camp chef pellet grill. Is it “better” to use 225 or hi-smoke as a temp settings and if I use hi-smoke is that done for the entire cooking time. I am thinking about not wrapping this time. Is that a crazy idea? Time really isnt an issue for me.

If your Camp Chef is like my Pit Boss, the high smoke setting is a lower temperature. My preference is a minimum of 225. You can't hurt a pork butt if you're temperature runs a little high. The bark will benefit if cooked a little higher, also.
 
This forum is great! 1st time poster. I just did a pork butt today. High smoke which for the camp chef according to the manual is ~225 (mine held within +\- 15-20 all day. Started at 8am on high smoke for 4ish hours then bumped up to 250 for the an hour until internal was 160 then pulled and wrapped with foil and cooked at 250 until internal at 205 (about 3 hours) then rest for 30 mins before pulling. Turned out great. this butt was just under 8lbs. Good luck!

As a suggestion once it’s wrapped you can crank on up to 300 and not hurt it a bit. It will still be juicy and tender and cut your cook time signicantly.

i will be trying this recommendation tonight. I got my wife to throw on a pork butt for us to have at work tomorrow. After bragging up how the first one turned out I brought this on myself.
