I think we are gonna trash out on Ramen tonight ;)

Smoked this belly slab today with post oak, ran the offset around 300°f for about 4 hours to get here. Picked this up at WinCo.

A bit of a different approach, I used fajita seasoning, cayenne pepper, granulated garlic and black pepper. I seasoned heavily and left it on the counter for a few hours while i cleaned the grates and got the fire going.

At the start

When I put in on

After some time it was velvety, looked great.

I find this interesting, this was before the moisture pulled in to the spices. Like I said, seasoned well.

Checked on it a few times but mostly this was a blind cook. I finished it with a good dose of dark maple syrup. Let that set up for about 30 minutes.

Rested it on the counter covered for a few hours and sliced. Melt in your mouth heaven.

My goodness that looks spectacular !!!! Magazine worthy close up sliced picture ! Great job. :emoji_thumbsup: :emoji_thumbsup:
Thank you, I'm humbled.

I'm planning to fry some of it crispy if our daughter doesn't finish it off. I think that will toss it over the top.

Looks fantastic, never would have thought of using fajita seasoning. Did you put the maple syrup on like you owuld bbq sauce?

The fajita seasoning worked very well. It's a nice savory flavor. Yes, I waited until the very end of the cook and used a silicone brush and just brushed a good coat of maple syrup over it and gave it another 30 minutes to set up.

Just what the doctor ordered!

You got some great color on that!
After the seasoning I put on there sat on the counter for probably 2 hours it developed in to a velvety red. Smoking it in the offset with post oak didn't hurt but glazing it at the end with maple syrup really made it pop.
