Pork Belly Burnt Ends

Hey all,

Grabbed a pack of pork belly from Costco on Saturday I decided to give Pork Belly Burnt Ends a go yesterday...was my first time trying this...read so many great posts about it...figured I was missing out!

From what I had read...seamed pretty simple...

1) Cut into 1.5'' cubes
2) Coated with some Olive Oil & Rub
3) Set them in the smoker at 235F for 3.5 hours

4) Removed from smoker
5) Tossed in a pan with butter, honey, and bbq sauce
6) Back in smoker, covered, for 90 minutes or so
7) Unfoiled for the last 20 minutes

Verdict: I think I should have trimmed the fat a little...the meat was awesome, but the family was dissecting each piece to remove the fat...was expecting more of a pop in your mouth and enjoy type of experience.

Any suggestions are appreciated!

When I Make them I almost try to slightly burn them in the smoker during the initial run. This gives the fat a nice crisp texture.

in my opinion, without that crisp texture they do sort of lose something because the meat gets a bit tough and the fats a little much to deal with.

Sounds right...so raise the temp to 300?
 
Depends on your equipment. I think of it like almost adding a char to them. However is best for you to do that would be the way if go :-)
