So I recently got a smoking deal 1/2 off on a Camp Chef smoke pro SG haeve not done anything too exciting with it yet besides Ribs, Chicken wings, Ribeye, beer can chicken
Finally got around to do some exciting stuff.

Picked up some pork belly from Costco Cut it into squares
Used Grill Mates smokehouse maple seasoning on them ( I love the stuff on pork and chicken)

Ran the pellet grill on the high smoke setting temp was about 225 did this for 3 hours

Pulled off put in a drip pan drizzled some honey on them added some unsalted butter and a bit of famous daves sweet and zesty bbq mixed that up and then foiled the top and put back in the pellet grill at 235 for about an hour and a half before checking the temp

After reaching about 205 IT I took off the foil turned the pellet grill up to 250 and cooked for 15 more minutes

I think next time I may crank it up a lot more at the end for the 15 minute un foiled

These didn't last long at all I even felt nice and shared a couple to a guy at work and he told me He would take more the next day. I told him in his dreams.

Great looking snacks there! I saw bellies at Sam's club last week and came soooo close to buying one, but the wife hates fatty meat, so I didn't buy one:(
 
radio radio that just means more for you. My wife like them but she thinks they are too rich she says so only eats a couple.

Thanks everyone cant wait to do more on the pellet grill. I leave for Alaska in a couple days and should be coming back with 100+lbs of sockeye that should go good on the pellet. Good thing I am restocking I ran out of my last stock before summer started and been wanting to make smoked salmon dip.
