Plateau Question

OK, I understand the rule of when your meat hits the plateau, you should not increase your smokers temp, just play the waiting game.

My question is, what if you notice the smokers temp decreasing during this time, is it ok to refresh the fuel if necessary to maintain the smoker temp?
 
Yes you want to maintain your chamber temp. So yes you can refuel. But do not add the fuel to try to get a higher temp and get thru the stall faster.
 
Exactly as bmudd said, and depending on what you are smoking you could be in for a long night, hopefully not but you never know with that dreaded plateau.
 
Of course, definitely add fuel. Just don't "pour on the coals" to raise your temps in order to get through the plateau.

The plateau is gonn ahappen no matter what. It is what the meat wants to do. Let it, follow it and be aware of it. You will both be thankful in the end.

That may sound a bit much like Zen and stuff..but it's about as true as I know it.

I personally add only actively burning(glowing)coals, the time to catch the fresh ones will cause a delay and possible decrease in heat from the new ones catching. You should have a fire chimmney; have it on hand with say half a load in it and when the heat starts going down,light the chimmney and get the coals glowing ,then add to your cooker.

As stated, the temp. should stay as steady as possible through the plateau.Good luck and SMOKE HAPPY
